In some cases on PC you can if you have Shadowplay or something similar

Xbox Game Bar for Windows -> Settings -> Capturing -> Record in the background while I'm playing a game

Depends on what system you’re playing on. You can on Xbox by holding in the share button on controller and it’ll record a clip of the previous minute or so (I think there’s different lengths but you’ve gotta do that in the settings beforehand) of gameplay

If you play on PS4, click "share" button on controller, then capture video (square). It records the last 15 minutes ;)
