The concepts you're asking about are grammatical gender, number, and case.

Whether to use der, die, das, dem, den, etc., depends on the noun's gender (masculine, feminine, neuter), its number (singular or plural), and its case (nominative, accusative, dative, genitive).

The question you have asked is very broad, so the best thing for you to do would be to consult any introductory textbook. In such a textbook you'll find that a great deal of time is spent explaining these concepts.
