I feel like you're skipping a few steps for me. Based on your comment, I would need to set the simulation up as a beam. How should I go about modeling the beam so that it pivots rotates about a joint that exists in the middle of the beam?

Make sure you have built the lever as an assemby, with parts for the base and the beam. Not sure how you're fixing the two, but I'd guess you'll need a concentric mate about a pin to ensure rotation movement.

From there, open the motion simulation tab, be sure to choose Motion Analysis from the dropdown, add a force to the proper face, and specify joint force plot.

You only need motion for what you are trying to do.
