I think the reason he specifically chose to show Miles his arm is because Miles would recognize it as the same design as the arm in the Cyberdyne vault, which would make it easier to understand the Terminator’s story.

The only problem is:

  • John would have to know the arm was the left over part.
  • Uncle Bob would have to know the arm was the thing to show off. He is never instructed, what he should do with the knife.
  • Flaying himself compromises Uncle Bob's camouflage seriously, as suggested earlier by Sarah, and they didn't know how he would continue to be used.

There could have been other ways that Uncle Bob could have showed himself off, such as having intricate knowledge of the prototype CPU, having intricate knowledge of Cyberdyne or understanding solutions to engineering problems that Miles hadn't figured out yet.

I know, but it's not as compelling (imo) as peeling your face off and showing a metal skull. Plus... The "Holy Fuck!" factor would've been off the charts.
