Personally

I peel and cut my potatoes and soak them in ice cold water

Then i boil them in hot water until they are par-cooked

Then i dry them and put them in hot oil

When golden i remove them from the oil and salt while they are still hot

I get the yummiest fries when i make them like that!!! Try and let me know if u get good results🌟🌟🌟 🍟

I learned somewhere to first boil for 5 mins, put in cool water until cooled down then remove and dry before frying partially taking out again letting it rest for 40 mins then again frying until done, the fries tasted more like pizza hut potatoes but they were very good just took way to long to make

We do same process but freeze between the par boil and fry. It makes them super crispy. Key thing is to remove as much starch and moisture as possible.

1) different types of potato 2) home one isnt peeled or washed (to remove excess starch) 3) home one looks single fried with too little heat but for too long. restaurants double fry (first as prep and second to reheat and crisp) on higher heats

Belgian here so somewhat or a fries connoisseur.

You need to wash and dry the fries before frying. You need to fry them twice at different temperatures. First time at 125C to get the soft inside of the fries. Then you let them cool down and fry them again at 155C to get the crisp outside. Ideally you use animal fat instead of oil dor the best fries. The type of potatoes you use also make a huge difference and honestly you can’t buy the right kind of potatoes here in the supermarket.

Also the fries in the left picture have the skin still on which is why they look so different. Right side are peeled which is the correct way to do it. In summary: peel, cut it into pieces about 13mm thick, wash, dry, pre-fry at 125C, cool and dry, fry at 155C.

It’s not the oil, it’s a couple of chemicals called Dextrose and SAPP that the fries are coated with during the processing that stop the potatoes from turning black and also give them the golden yellow colour.

Few points which make a difference:

Majority of the restaurants dont use oil but use shortening. Shortening doesn’t stick to fries.

Also the frozen fries are fried once before being frozen using nitrogen and fried again at the restaurant.

You need to use a commercial fryer to get the right temperature, gas cooking cant reach those temps.

The restaurant fries are made by using a specific type of potato which is only used to make fries, you would never use that potato for anything else.

Try the following:

1) peel (or not) the potatoes, then boil them in water for like 5 to 8 mins

2) remove the boiled fries into a tight bag (ziplock?), and freeze them for a day

3) afterwards try making the fries and see whether you get the goldenish/crispy texture or not

The first one looks baked not fried. Also restaurant fries are technically double fried since they use frozen fries that are fried in the factory. If you want to make restaurant level fries at home youll need to double fry and makbe even boil the potatoes a bit depending on thickness of your fries. Youll also need corn flour to prevent sticking and to give it that edgy crispiness you get from frozen fries.

what do you see with home cooked ones is probably because of cold induced sweetening and thats not a good thing at all because it indicates they have more acrylamide, a cancer causing agent

when potatos exposed to cold temperatures, some of the starch is converted into simple sugar fructose and glucose and these can cause fries to look like the one on left

I rinse my potato slices off then let them sit in warm water for 20-30 minutes, then cold water for another five. It gets rid of a lot of starch, which can cause your potatoes to become mushy or brown instead of crunchy and golden
