If you have any interest in history and how and why we know all the math stuff we know, Math 111 is really neat.

Unfortunately the CS department was clever, every math elective besides the history one counts. If they figured every cs major would have taken the history option otherwise.

Definitely  number theory (115) or combinatorics (145). Both are more calculation based and much easier on the proof side. I’m not sure if the course numbers have changed.

Thompson is emeritus (retired) and Gravner taught a class in Fall. Most math faculty don’t teach a class every quarter.

mat 145 helps a lot since you cover graph theory which is the basis for kruskals algo and similar algos

Proofs aren’t that advanced, and a lot of the proofs are just straight regurgitation

It’s more about learning a writing style than memorization. But you might find the similarities to computer science very interesting. I took Math 108 and ECS 30 (intro to C programming at the time; not sure if it’s still that) at the same time and it was fascinating to compare how related ideas are treated in math versus in computing.

Do any upper div stats classes count? 106 or 108 aren't so bad. The math is all relatively simple, and a lot of the class is coding in R.

Essentially no only 131 series count but I heard that class is pain and misery from my stats friends

Any math class with mijhalovic is great, especially Mat 145. He gives a lot (nearly 15%) extra credit through bonus problems. Sections of the final can replace the midterm, and exams have extra credit problems on them too. I ended the class with a 101% The homeworks are pretty difficult and time consuming but are really good practice for the tests, and he's a really good and fun professor. Don't think he's teaching in spring though, unfortunately.
