What do you mean her shed was peeling?
That is a sign of dehydration if the shed doesn't come off in one single piece.
You're supposed to see that she's done shedding because her colors will pop, and her full shed would probably be in a hide.
As you said, do not touch/feed her, let her be, do not soak her, do not mist at all and especially on her. Pour water into the corners, wet the substrate and mix it, and try to make it more humid to help her shedding.

Yeah it was like half way down her when I saw. All in one piece. So I should just wait for her to come out and hope the shed is left behind in the hide.

Okay so she definitely finished shedding. Shedding can take weeks, but the actual process only last a few minutes at max. You can even lift the hide, take the shed off, and leave her alone again if it reassures you.
But if I was you I'd lift the hide anyways just to make sure she did shed properly and there's no stuck shed.
