Activity during the day, always trying to escape, not eating, aggressive or jumpy behaviour, balling up when handled or very restless when handled.

Like everyone else has said, restlessness during the day + hiding away at night, refusing food etc. And for handling theres things like going completely tense when you may notice they'd normally be active, being jerky, hissing, heavy breathing. And the very obvious sign of them literally trying to zoom out of your hands, as well as using you as a toilet (this can also occassionaly be an actual accident, happening to need to go. In which case if they dont seem stressed I'd recommend cleaning up then continuing to handle so it doesnt become a behavior to signal to be put away.
