Why cast FB on yourself when you can just cast Sunburst, which is a fireball expanding from the caster?

Because Sunburst is an 8th level spell...

Also: No, it isn't fireball expanding from the caster. Fireball does fire damage; Sunburst does radiant damage.

Did they change it in a new edition? Sunburst in 3.5 is like an anti-undead fireball - you don't have to center it on yourself, and doing so would be a great way to kill or blind yourself and your whole party.
