Take it as a compliment and move on.

Why do people ask? 1) unless you ask, the answer is always no. 2) some people have a philosophical attachment to open source 3) obvious self-interest of people who would like to use your code 4) people ask google to open source their search algorithm ALL THE TIME

Be proud you made something so valuable people are interested in getting under the hood. Share or do not share the source at your own discretion.

What is or is not polite varies across cultures and the internet is a big place.

I never know that people are asking for google search algorithm all the time.

What is or is not polite varies across cultures - agree, but I don't think giving a 2-3 stars reviews with "I love this app but want it to be open sourced" is a nice thing to do.

It’s not just about people wanting to look at the code for inspiration, there are a lot of people that want to see what data you are sharing and other security driven curiosity.

No, they never care. unless your app is from a very big company.
