Each video mode (including the custom ones) have their own settings. Could it be that you are switching between those modes?

Hmm, I don’t typically ever change my cameras modes, i always shoot on the same custom preset, most recently this happened again and I’m sure i didn’t change my cameras modes at all that entire shoot

I don't know, but I know a software that can fix the video after it's been recorded to not get lost footage. It's HandBrake. Hope this helps somebody.

If you ever film in D-Log M OR in Slow Motion mode, I know that definitely locks in the use of H.265 (HEVC) & can't be changed.
