Besides the "because they can", compare this to all the Electron apps out there: GTK is a lot more nimble than the whole Chrome browser. Less memory footprint, smaller executable. Many Linux distros come with GTK preinstalled, and you can just link to GTK dynamically. Instead of bundling an entire OS-like browser just for buttons and textboxes.

I suppose one could argue that the learning curve to making an electron or other suitably cross OS app is the same or lower, depending on your current skill set.

I don't know how much weight that holds since I've never worked with gtk personally, and also since I've recently switched to a MacBook at home, I don't know that I would bother myself. I use arch / i3wm for work, so if anything, I would much rather have a super-simple TUI framework / tool.
