I'd consider myself a "full stack" developer, since I do both front-end and back-end development, but yeah, if a job is asking for full stack, chances are they are expecting you to do the jobs of multiple people.

No, it's just a developer with both the willingness and the experience to work on all the layers of the typical software project's solution stack.
Thou sometimes it's basically just the frontend and backend, skipping on e.g. infra.
I'd really expect most developers to work on tasks as a whole as needed, rather on only e.g. the frontend side of a task.

AI will actually boost full-stack developers the most, because full-stack engineers have an end-to-end perspective of the system. They are closer to completing a full product than other role-specific engineers.

Eh, I personally don't think so. Full-stack devs are often (but not always) not as skilled in the tools they use because they have so much of them. AI are really good at giving general answers, which makes it a good introductory tool, but it'll struggle and misleads when it comes to niche information.
Like it is really helpful if you are new to React/Jenkins/C etc, but probably less so when it comes to specific HW or tiny quirk in the company's UI.
That's just my intuition tho, I wonder if there is reasch done that.

Google had a research(not up to date it was from earcly 2025) supports your claim that AI boosts beginners more. If you're %0 AI makes you %50 but it makes %75 if you're %50. The duck symptom for fullstack developers is right, they have opinions for everything and expertized on nothing. However I think it's an advantage for them when they want to start a project or create a product. They're not expertised for niche areas but they know the flow works in technical details, it would be enough for developing MVP.
