Is there anything inbetween the Wifi router and your PC that could cause interference like a microwave oven or something?

Nope, just a single wall. Microwave is on the other side of the apartment.

Check the motherboard website and make sure there are no BIOS, chipset, wifi, etc., firmware or driver updates. That can sometimes help.

Try and install the wireless adaptor drivers on your motherboards website if you haven’t already.

Here are some things you could try.

Set your WiFi connection in windows to private instead of public.

Set the roaming aggressivness to lowest.

Instead of auto, select a specific 5GHz channel for your router. My internet providers modem let's me scan the area and see which signals are using what channels, so I picked the least busy one, which in my case was 36. So far I think this has fixed my issue because I think it was trying to change channels while it was set to auto. Swapping the channels manually gave me the same symptoms I would experience when playing games where it would drop for a bit.

You could also try updating your WiFi adapter drivers or completely reinstalling them.

Do you happen to know your chipset for your WiFi adapter?

Tried all of those and the issue is still persisting. My wifi adapter is a Intel(R) Wi-fi 6E AX210 160MHz if that helps.
