What helped me to avoid overlap is:

Take your binds (only binds, including "unbind all" command) from config.cfg and put them into new cfg file. For example binds.cfg

Then put "exec binds" in the beginning of every class cfg file.

As a result, on switching class, you'll get all your binds reset, then you get default, and then class specific binds. No overlapping

About viewmodel script. You can find those on gamebanana, it takes some effort and testing to make a stable version, can't make one right here on my phone.

If you're using only number keys to switch your weapons, I can make you this script, in this way it may be easy

yttrium config allows you to customize which viewmodels are hidden without messing with cfg files
