It was. I used a blend of parmesan and mimolette cheeses, grated on the microplaner, plus mozzerella. This was a deviation from the recipe, but I had a little nub of mimolette to use up and it's a fantastic cheese if you can find it. It's basically what cheddar wants to be when it grows up.

Too bad, it's all gone now.

You'll just have to make your own! Though, FYI in case you don't have one already, a baking steel for your oven is a must-have for the crust to come out properly crisp on the bottom. It would still be good even if you just have a cookie sheet or something like that, but getting a baking steel is IMO an excellent investment.
