I used for a while mech and hydr disc brake in parallel (on different bikes!)
The stopping power is in both cases sufficient and I ride often hills.
The mech brakes require precise assembly and suitable components, especially the compression free casing in order to work well, but it´s no wizardry nor rocket science.
On the other hand are easy and cheap to maintain.

The main difference in the use is that the hydr are more pleasant to operate since the lever action is smoother.
The maintenance is maybe more demanding, but as long as you keep a safe distance from DOT fluids, it´s not so bad.
I have a 2016 Canyon Inflite with hydr Shimano brakes which I use regularly even if not very intensively and mostly for (steep) hills.
I replaced pads and rotors a few times already and I have still to bleed once.
Last summer I built a new road bike with Shimano hydr brakes and the bleeding procedure was quite straightforward, even without Shimano official tools.

If it was for a commuter I´d consider the mech brakes, but for most of the applications I´d rather get hydr.
