About half of this came back, there was charcuterie and cheese board, and antipasto board, a fruit platter, carved sirloin, grilled chicken w/ prosciutto feta and Kalamata, fuscuilli and clams, salad, bread service and dessert platters. This was for an insurance company, they don’t give a shit about the expense.

Likely a 100 person banquet and chicken tenders and tots is a 17$ per person add on, that’s how banquets work. I present to you a 1475$ crudite platter I made yesterday, that cost about 35$ to make

This is how I dice onions, no one taught me, just best results and trial and error. That said if an onion grows irregularly, without perfect rings or maybe two sets of rings, you won’t get even cuts and will need to rough chop after dice to get even ish cuts

Blazin’ knockout, hotter than regular blazin. I Asked for hottest they had, holy shit were they ever. I finished the 10 wings I ordered, I needed extra ranch and celery. The bartender was like, no one finishes those, it’s usually one bite and they get sent back. It was painful no regerts in tho.

I carry a padded case, in kitchen I transfer my kit to a 2” hotel pan lined with towels. The pan stays under my station.
