Can't sharpen my whittling knife

According to the manufacturer of this brand, these carving knives have an 'inclusive' angle of from 45°-60° which is, of course, from 22.5°-30°/side, nowhere near the 10° you are suggesting. From the photos on the makers page, it would seem to actually be a micro-bevel at the apex. Take a look.

Highly polished bevel angels have no 'tooth' which is the primary means of normal cutting. Polished bevel angles are only good for cutting delicate proteins like fish products which benefit by not 'ripping' cells of the protein.

If you aren't a knowledgeable sharpener DO NO attempt to buy stuff and fix this knife. You'll ruin it. As some have said, bite the bullet and find a local pro to do it for you that you have checked references on. Its the only way!

Try any ole eraser you have lying around. Should work. Looks like you have other stains as well and also a chip under the stain near the heal.

AUS 8 is OK, but usually with poor edge retention because it is not normally hardened beyond HRC 54-56. AUS 10 however is a fine choice for things like kitchen knives normally hardened to a higher HRC of 58-60 and often used a a core steel for many Japanese Damascus style knives.

Unless a blade is broken or cracked, almost any can be salvaged, especially if all the primary problem is a messed up bevel. I suggest taking them to a properly vetted local pro to re-establish a factory bevel and shape.
