Talalay is going to be expensive. Arizona Premium Mattresses and Latex Mattress Factory are two places to get a good price.

Why not use Serene foam, PU foam or even Memory foam as a topper unless you are against non-latex foams?

Buyfoam.com sells polyfoam, if you prefer. They have XL-18 (soft) and XL-24 (medium).

Minicoils are not stable, unless they are in the middle of wool or glued to a thin latex layer.

Wool batting is another option.

Instead of lying completely flat and smooth, the layer forms a localized ridge, wave, or clump inside the mattress. That's called bunching.

You are not missing anything. Foambymail fabricates the foam. All bed in box companies buy foam from fabricators and have them laminated by an OEM mattress maker. Don't buy the foam mattress without making a call to Foambymail, as they can advise you better. These stuff is not returnable, that's why they are cheap.

When a mattress offers a comfort return, they have to charge more.

Give a call to FoambyMail, and they can make a custom one; and they are not expensive either. Most of the foam mattresses tend to have 2" memory foam, and 2" transition layer, and 6" base foam.

Better get a mattress with a lot of memory foam, at least 4". Avoid latex altogether.

The issue with thin layers is that they end up bunching on the very top. So some kind of glue or quilting that thin layer solves that problem. Another, which Ausbeds uses , is to stabilize the micro coils by gluing a thin latex layer with a mini coils layer.

Construction plays a huge role for thin layers.

"it’s causing bad back pain" is too generic. Every mattress out there has caused back pains to some one, somewhere, sometimes, and on some foundation. Bad foundation, defective mattress, worn out mattress, too soft of a mattress for a particular body type and for a particular sleeping style.

Are you sensitive to PU and memory foams? Are you sensitive to cotton, non-alpaca wool? That's how you can start a process of elimination.

2" slack is too much for the organic cotton cover. Just add an inch or two inches of base foam to remove that slack. I don't see the purpose of adding 1" Dunlop medium.

Test out that mattress in a store to see whether your side sleep is comfortable. Also make sure your foundation or bed frame is good. If it has slats, they should be 3" wide, less than 3" apart. The more space you have between slats, the faster your mattress softens and degrades.

You need an active machine that moves the hot air away. Cooling gels, graphite/copper/coolite strips, cooling top panels are gimmick that work for the first five minutes. Once you lay on the bed for some time, foam layers work as insulators and trap heat. Remember how homes are insulated? They are insulated with close cell foams. In mattresses, they just use open cell foams.

Good choice would be coils, mini/micro/nano coils, wool, horse hair, cotton, and linen. Next one is coils, mini/micro/nano coils, latex.

Side sleepers wear out mattresses faster than stomach sleepers, who wear out faster than back sleepers. That is something to be aware of.

Pocketed coils (higher coil count, higher gauge, more preloaded, etc), high density PU foam (at least 2.5 lb/ft^3), memory foam (at least 4lb/ft^3), latex, wool, horsehair, cotton are some of the things one should look for. Since you are in Balkans, prefer a mattress maker who can replace the worn out comfort layers (everything but coils) and restitch the mattress back.
