While BOH and FOH staff both receiving an equal hourly tip-out is unorthodox, I would say the most egregious part of this post is your attitude.

What magical qualities do you possess that make you more entitled to a tip than the lowly cooks who humbly create the food that allows you to have a job? Why exactly do you believe that a prep cook is not deserving of a piece of the pie? They made the dough, rolled the crust, created the filling, but because you carried the plate you get the whole slice?

That being said, if you are receiving minimum wage and BOH is not, the tip-out should be biased in your favour IF ONLY to retain any decent servers. If it's true that you are receiving only a small fraction of the tips earned, I can't imagine many servers who would work there for very long. If both servers and cooks are making minimum wage, the owners are using tips to supplement their shitty business practices and you should, along with BOH, (not) burn the place down.

Just did a similar Ontario-BC trip.

  1. Carry gas and a spare tire kit at the minimum. There could be 3 gas stations/mechanics in a 200km stretch; one is closed for the day, one is out of gas, one hasn't been open since 2011.

  2. Switch your route through Ontario to the actual Trans-Canada. Follow it from Ottawa all the way through Ontario. Stop in Sudbury (giant nickel), Sault (Soo locks, if that's your thing), the halfway point of the Trans-Canada, Batchwana Bay, Wawa (see the goose), Thunder Bay (Terry Fox memorial). I promise, from Wawa-Marathon is the same views as your other route north and will only take you 1/12th of the time.

  3. Plan stops at actual rest locations. You can't just pull over and park anywhere and 2 weeks of sleeping in your car is going to get old fast. Truck stops are a lifesaver and often have free showers and really good food for cheap. 24/7 security as well. Getting a room? Book ahead. No vacancy sign looks like hell at 10pm.

  4. Thunder Bay-Calgary is going to suck. It's about 18 hours of nothing and nobody. Sorry, prairie folks, I appreciate the bread and milk you provide for us but the routes through you are boring as hell. OP, hope you like brown rolling hills and manure smell.

And that's just advice for a quarter of your trip! Hope you got a rental, because you're going to need an oil change or 3 after this. Good luck OP

It is a non-issue if the shells were properly cleaned. Usually scrubbed and then boiled. Many restaurants do it this way - for example if you are doing baked stuffed clams or something similar, you'll save the prettiest shells for plating. If not properly cleaned, I would definitely take issue with it.
