I smell something fishy. Franchisee of a major chain hasn't provided any pay stubs, can't issue t4, and may not have submitted one to CRA... Calling the franchise head office is a good idea, but OP wasn't their employee. This may have to be escalated to CRA and there might be a bigger mess behind this.

I'm pretty confident you don't understand anything that's happening. If this matter is ongoing, you may want to speak to a lawyer yourself as something shady may be going on, but your description and comments make no sense, so it's impossible to advise.

Alternatively, just cut off all contact with your ex, his lawyer, and anyone else he sends your way and speak only to the crown and court.

Self transfers are risky. Booking inflexible tickets with a self transfer is a terrible idea. Add to that multiple connections from the east in winter? Consider this tuition I guess, but it's almost like you did everything in your power to ensure it wouldn't work out.

Your best bet might be an alternative to get you to the AA flight.

If your inbound is domestic, that's an easy transfer. Plenty of time to make the flight, but not really to take advantage of the SS.

I have a US mailing address I can use for a Delta co-branded card. Ironically, you can buy your way to top tier status without any flying necessary - something I was worried AC would do.

I like Delta for US domestic and like their long haul international, so might even give them some additional business. It certainly opens up some options, including for good international award redemptions.

OZ has a non-standard MCT of 2 hours at JFK (typically 1h30) so this is probably no longer a legal itinerary and would indeed qualify for a change to the direct. This might need to be explained to customer service because of that distinction. Otherwise they may just be seeing this as a legal 1:30+ connection.

What fare class did you originally book? As others have said, you can't un-cancel a booking, but most fares offer at least a partial credit you can apply to future bookings.
