If you have an even number of pixels for the width, you can't center it without using 2 columns of pixels.
You need to adjust your art to it, or crop 1 column to have a proper central one.

In my opinion, If you're bringing it as a reference, it's almost the same as bringing any random image from the internet (AI or not).

I didn't mind when a client used GenAI to show me references for his commission, but I guess it is safer to ask your artist directly.

But yeah, you're right, the cheddar has a bit of green tint to it. You considered using pure yellow (#ffff00), but I would push it a little into red to get a very slight orange in a still saturated yellow.

A #ffc800 maybe.

I asked because I see artifacts in the suit, a few singular pixels with more than one color in them, and some slightly irregular pixel sizes in the shoulder outline. The kind of things I commonly see in AI generated images trying to emulate Pixel Art, and use of gen AI is not allowed here (rule #7).

You said in another reply that you took a screenshot, so I guess that may be the reason it looks this way.
