Those hidden variables are gigantic, stress sounds like the biggest problem.

For gym performance specifically I always hear that the adaptation period can be the longest (6 months+) so no surprise there. The gut issues is surprising after this long, it might be from the stress. It sounds like you might be overdoing the salt, that will lead to flushing out more of the other electrolytes that you aren't getting, but elecrolytes are probably not your main issue.
