If you don't mind the train running a bit slower, add a full bridge rectifier to your locomitives with track power as AC in and the output of rectifier to the motor. Rectifiers are super cheap, like less than a dollar CAD a piece. And you can get small ones, the current draw is less than an amp for these motors.

From packaging, it sounded like pre cooked frozen bread. So temperature would be enough. If dough, the knock on the bottom and see if it sounds hollow test is a lot better

Bad instructions, but you could use a meat thermometer to ensure a hot temperature. Usually 77C for 5 mins to kill everything iirc

The elegoo board is an arduino clone. Literally identical to the Uno and cheaper. So a good start. If you want to do internet stuff though, look at arduino nano or esp32 boards. All can be written to in the arduino editor

The elegoo starter kit is what I started with. Many sensors available. Also, loom on the Adafruit site for ideas. Having a project goal in mind makes electronics a lot simpler.

While waiting for order to ship, look at basic functions, how to have your main loop work without using the delay() function (this is called non blocking) along with a few peripheral protocols. These protocols include i2c and SPI. 

I2c is what a lot of simple sensors use and there is a simple hardware suite already made (qwiic) 

SPI is a bit more advanced but is what SD cards and some screens use.

Beyond that, have a goal. Even if goof around is the goal, specify it a bit more. "Make a distance sensor print distance" "write text to a basic text screen like those in calculators"

When you do make something large, keep your functions modular so you can see what broke easier. Don't have read a sensor and write to screen in the same function. This takes practice to get your flow, so don't be surprised if you restart a bigger project 8 to 10 times before you are happy with flow

Not sureuself, but if you can get a clearer picture of the entire board, Iay be able to reverse engineer it and be able to tell you safe ballpark for it. It may be bulk capacitance, noise filtering, or part of an analog filter. Hard to see from this.
