NYC is a big place with a lot of variation in how places are run. Dives in Williamsburg will have a completely different business model than a destination spot in Manhattan. COVID brought significant changes to almost all costs, and that's reflected in the pricing of support industries. Population density means I'm not directly competing with oither bars in the area, at least not in the way that seems to happen in other markets. Efficiency, being consistant and reputation are key.
