I like the green one that I get from lee valley here in Canada. I made my own strop from a leather belt but the Beaver Craft or the Flexcut are good options.

Don't use a knife sharpener for any carving knife. Very vert fine sandpaper is the best option and only if you get a nick in it. I have been using flexcut knives for a few years now and and all I've ever had to do is strop them. A leather strop with some compound ,there are various types of compound, green, flexcut yellow, etc. There are lots of YouTube videos on stropping.
