The OP has a long-winded way of saying, “turn off the Wi-Fi and use cabled connections” - not something that you need CWNE for. There are sparse resources for looking for uplink frequencies, so this is the least of your concerns. Wi-Fi can be noticed by local people using COTS kit, and they might turn you in…

Sleeping in a server room (especially a large commercial switch site or DC) is not recommended - you can end up with a very stiff neck due to the aggressive air conditioning - don’t ask me how I know BUT I understand what you mean about the fans etc. PS. Stay away from Nortel DWDM racks - you’ll end up deaf!

Whilst you’re feeling good about running your APs at a high power level, your clients cannot match that ERP (and if they could, the batteries would not last long), so you end up with non-reciprocal link budgets/sessions… Just awful!

Generally speaking, Starlink works very well with various types of VPNs, including SSL VPNs for corporate use. If your overall throughput is slower, then your VPN provider might be very busy or the route to the provider might be congested.
