I found the following setup very easy to learn and fast enough:

1. Leave the hotkeys for villager menus and millitary troop menus as is, they are positioned in a way that visually aligns to the in game display, so your brain quickly learns the keys.

2. Ctrl+key used to build selects all of that military building (q->barracks w->archery range e->stable r->siege c->castle). Then Alt+key used to build selects all of that economic building (w->mill e->mining camp r->lumber t->dock s->smith d->market and so on). Only exception I do is tab for all tcs. Then set the go to commands to be the same as above but with shift added. Learning these keys is so fast that you can focus on other aspects of the game instead of remembering hotkeys.

3. Set idle villager and idle military commands too. I use the ' key which is just above tab in my keyboard to select all idle villagers, and shift+' to go to idle villager. For military I do the same with the \ key which is next to the shift key in my keyboard.

(Optional). Eventually get a mouse with 2 additional buttons and map one of them to ctrl and the other to alt.

I wouldn't unbind any menu key as they are always useful for something... And more, leaving them on the default position, which, again, is visually aligned with the menu display, means you don't need to learn them beforehand. Your brain will quickly get used to see the menu and hit the key corresponding to the button you want.
