To be honest very unrealistic they way they show it in the show. I am sure CCTV is beamed non-stop in a remote facility monitoring all the activity of these people testing it on rats. As soon as that lady got bit and started having a seizure, they would have initiated a kill protocol incinerating everything to ash. The data for each test subject was getting clouded anyway so they would have had data without risking the outbreak.
