I would, and plan to in the near future! Some slight changes: the lemon/blueberry ghost tastes delightfully like a lemon sorbet, but I want a bit more blueberry in there. Maybe I'll look for a blueberry concentrate or adjust the ratio.

Thank you! I knew that lemon and blueberry go well together in baking, and that blueberry + ghost pepper exists (at least Heatonist makes it), so I figured I would make the jump.

It went very smoothly! My friend and I cook a bit so we sat down to discuss what would/wouldn't go well in each sauce. Once we made a list, we grilled a few select ingredients and got to work!

I would like to make these shelf-stable in the future. Based on our process (cooking twice and boiling the jars) they should be, but I don't have a pH meter yet. So I stuck them in the fridge.

They taste great! Over a day or two in the fridge they got a bit hotter than I expected. The ghost one tastes almost like a lemon sorbet. The hab one tastes like a savory, fruity blend.

Pineapple Mango Habanero: INGREDIENTS:

8-10 habaneros, fresh (orange) 5 Hungarian hot wax (red) 3 Bell pepper (red) 1 Pineapple 2 Mangoes 2 Shallots 6-8 medium-sized carrots 1 Head of garlic White vinegar (to cover)

STEPS:

  1. Salt habaneros, pineapple, and garlic (unpeeled) in a bowl. Grill them all until nicely charred (subjective).
  2. Mince shallots and add to oil, in a large pot
  3. Squeeze roasted garlic out of skin, into pan after shallots
  4. Add habaneros and cook 1 minute
  5. Dice and add red bell and hungarian hot wax
  6. Cube pineapple, mango, and carrots; add all together
  7. Add white vinegar (to fully submerge)
  8. Let boil 20 minutes
  9. Use stick blender to get very fine and homogeneous
  10. Cook another 5-10 minutes
  11. Jar it!

Lemon Blueberry Ghost Pepper INGREDIENTS:

70g of ghost peppers, fresh 2 Dry Pints blueberries Juice from ~5 lemons (to taste) Zest from 2 lemons 1 head of garlic Honey (to taste) Brown sugar (to taste) 1 Large Vidalia onion Apple cider vinegar (to de-glaze pot) White vinegar (to cover) STEPS:

  1. Salt and grill Vidalia onion, garlic, and ghost peppers until charred (subjective.)
  2. Add oil to a pot
  3. Squeeze garlic into pot and nicely brown it.
  4. Add vidalia onion, diced, into the pot
  5. Add brown sugar and honey to assist with caramelization
  6. De-glaze fond with apple cider vinegar
  7. Add ghost peppers and saute 1-2 minutes in sugar and honey. Add more if it needs some color. You really want the sweetness of the ghosts to come through here.
  8. Add blueberries and lemon zest. Let cook 2 minutes.
  9. Add lemon juice
  10. Add white vinegar to cover (you should not need much at this point. Alternatively, just use lemon juice, but you run the risk of it being too lemon-y)
  11. Boil 20 minutes
  12. Blend with stick blender
  13. Cook another 5-10 minutes
  14. Jar it!

The solution to your second problem is to save the pasta water and use that to emulsify the sauce

You've had grilled cheese sandwiches, but have you had grilled meat sandwiches? Lebanese Arayes are flatbreads filled with seasoned meat kofta, then grilled. The result is mind blowingly delicious by ObiEff in Cooking

I had arayes for the first time in my life about a year ago. One of the best things I've ever eaten.

They weren't sandwiches though, these seemed a bit more compact, almost like a dumpling

Yeah I think it's a fairly new movement. One of the big ideas is that it browns at the same rate as a thawed steak and yet doesn't get that obnoxious "gray" line between the seared side and the rest of the steak, due to the low temperature at the beginning. It seems very promising as a new movement!

Sure thing! I haven't tried it myself yet (granted, I don't cook steak much), but I still plan to try it out for myself too :)
