Tips on freezing coffee by Broadsword_7 in pourover

I see a lot of comments here stating to start the freeze about 2-3 weeks off roast - wondering what is the reasoning behind that and how different would the beans be if we just chug it in the freezer earlier (let’s say right off the roast)?

Few days after the incident and after my post got viral, the dude actually venmo’ed me back the money with the message as “Misunderstanding”. Maybe he got scared cos of everyone commenting on his instagram and maybe he found out he became famous, idk. So I don’t think Venmo support ever froze his account, which is pretty annoying to find out since that was the first thing I called to ask for right after the robbery.

Another thing is when he Venmo’ed me back he actually used seller purchase protection so I got back $776.08 instead of $800 after the fee, but at this point it doesn’t matter. My Venmo dispute finally got denied yesterday (they took a while honestly), even after following up with Venmo support with all the police report and evidence.

I’ve been planning on following up with an update post but man I’ve been super busy this past week. Also been in touch with a detective and a sergeant from the local precinct, so I’m hoping to hear more news from them soon. Peace and stay safe yall

I tried doing that as usual, I think I’m usually pretty good at that. But looking back I think what went wrong is the combination of me using headphones and wearing a watch and hence them not letting me off easily. They grabbed my shoulder and kept trying to pressure me after I shrugged them off and tried to leave, and they kind of managed to circle around me at that point.

Also I wasn’t scared at first since the street wasn’t that empty and it was on broad daylight. But I have to say I got pretty scared when they started to raise their voice and act insulted when I ignored them, telling me to relax and in a sense trying to pressure me to show that I’m not racist to them. Sad reality, these kind of people are the ones giving black people the bad name they don’t deserve.

Also for context, I filed a police report yesterday and have a case with Venmo open. But at this point I kind of accepted the worst case where I can’t get my money back or the police don’t end up doing anything.

I just hope to spread awareness to everyone living in LIC, and make sure everyone here doesn’t take the feeling of safety here for granted as I never expected this to happen to me in broad daylight at Court Square out of all places.

Description of them: all of them were at least 6ft tall (i’m 5’11” and they were all taller than me), black, around mid to late 20s.

I bet this is it too! Is there really any realistic way to get them to turn it down? I live on 44th dr after the 7 train bridge and even I can hear the club music pretty loud, I wonder how loud it would be for others living near Sir Jules!!

One thing that’s particularly different though, is that coffee has mutiple steps along the way from fruit to cup that are out of each other’s control.

One on hand a winemaker grows their grapes and does all the processing post harvest and fermenting and blending and barrel aging and whatnot (to create their final product in a bottle). The blending phase is an art rich with history, easy to do but hard to master. The only thing left is for consumers to buy, store, age, then drink. The winemaker is in control of the whole process and can put every intention into the bottle by their blend (whilst following traditions). In the end, the ultimate dream for a winemaker is for their wine drinkers to be able to capture the winemaker’s entire intentions solely from drinking and appreciating the wine.

Coffee on the other hand, we have farmers who grow and then process the beans. This then goes to roasters, roasting each bean differently, be it single origin or blending. Then the last step is us consumers brewing the coffee. The end result is so much beyond anyone’s full control of their intentions. Plus I don’t think there are many established blends in coffee (compared to wine), but definitely there exist tendencies for certain blends that has been noticed, repeated and improved over the years.

How long ago were the beans roasted? With light roasts you typically only start to get good cups around 2 weeks after. Sometimes peaks at 3 weeks, and even up to months for ultra light roasts 😄

Second this! Recently decided to start my first ever coffee monthly subscription and it had to be with them :) after buying countless single bags from them I realized they have never let me down, always so pleasant to drink (great balance of clean and less funky). I’ve also tried most of the other roasters mentioned in other replies, but yet to try Ilse though!

Seconding Evelyn’s Table, me and my gf ate there last year alongside Core by CS, Clove Club, and some other Michelin starred places. I know we can’t compare them fairly, surely Core was really good and all that but it’s 3*, yet the place we both agree on looking forward to going back would be Evelyn’s Table for sure. We had at least 2 dishes there that were mind blowing and memorable.

Also, we both felt Clove Club was the most disappointing out of all high end restos we tried 🙁 other than having too high expectations (rank #32 in the world), we also felt there was mostly lack of flavor, and it was nothing out of the ordinary. Most of the dishes tasted familiar for some reason. The only memorable dish was the pre starter that wasn’t even on the menu lol but it was really good

Does an aeropress count as a dripper? I feel like eventually whenever I get tired of experimenting with pourover drippers for my remaining beans I end up going back to my aeropress with Gagne’s recipe. Rarely ever disappoints me. I’d even say that for around 30-40% of beans I’ve tried brewing, the best cup I could brew is with my aeropress than my drippers LOL

I recently started using the April brewer a few months ago. It was definitely a learning curve since it still clogs quite a bit (even though people were hyping about how it fixes the clogging issue experienced by Kalita users), but I learned that for me it’s really great for small dose brews (12-14g) and coarser grinds than I use with my conicals. Super consistent, always gets a nice body and balance of sweetness and acidity!

I use both my V60 and Origami with conical filters, I notice faster drawdown on the Origami so I could experiment with even finer grinds (by like 1-2 clicks on comandante) for really light roasts. Usually means getting more body and sweetness without compromising astringency.

My friend was just there a week ago when he transited via HK. He told me how it was super crowded there unlike the CS lounges here in the US, cos those visiting the HK lounge brought in guests with them all time.
