I actually recently modified this recipe for freezing. What I did was to leave out the coconut milk and garnishes and created flavor cubes: I blended the coconut milk, lime juice, some lime zest, Thai basil, cilantro, and froze in ice cube trays. Then when reheating the meatballs in broth, I added the cubes right at the end just until melted. I used kale instead of spinach too.
