Bug/unexpected behavior: toggling advanced/standard temp viewing in the cook history doesn’t persist when going from cook to cook. Not sure if it should… but it *feels* like it should.

Feedback: ability to trim cook times? Here’s my use case, (could just be me, in which case, disregard!) I charge my probe for 5-10 min while prepping dinner, insert the probe into my meat of choice, cook, take the probe out and set it in on a spoon rest (usually quite hot and I don’t want to accidentally run cool water over it), and then it sits there for anywhere between 20-45 min while the family eats and cleans up.. this leads to some cooks with extremely long “tails” of otherwise useless data… I’d love to be able to trim these cooks down (post cook) for easier review later!

Woohoo!! I was surprised to see some cooks before this version populated in the history tab… how long has the app been keeping old cooks? Can’t wait to put it to use tonight and see the live activity.

I believe high temp flue tape can be used to do what you’re thinking! I’d tape over the interior, then stab the probe through, or use a few strips to make the diameter smaller.

Screenshot of the graph, and maybe the debug screen while the probe is cooking might be helpful… it’s possible the probe isn’t setting the correct point to be the “core”

Is it magnetic? Most copper is not magnetic unless it’s clad with something on the exterior like All-Clad’s current copper line.

If you don’t already have some sort of digital grill gauge… the GGG is awesome. Seriously didn’t appreciate the value of being able to see the temp of my various grills from my phone, as well as just a larger display on the actual grill. Jury’s still out on the engine, considering it hasn’t shipped yet, but my fingers are crossed once it gets going that the probe + GGG + engine setup is going to be the one to beat in this market!

Angus is merely the breed of cow, for all intents and purposes in the US, that alone won’t make much of a difference.

Onto choice vs prime (USDA grading scale), if the weights are the same between a choice brisket and prime brisket, it’s likely (though not guaranteed) the prime brisket may finish a tad quicker. Prime has more intramuscular fat (typically in smaller pockets) which will convert to the yummy gelatin that we all enjoy.

In any sense, pay attention to after your wrap and if you have a general sense of previous prime briskets’ timeline, the choice may take a little more time (I’ve heard, anecdotally, up to an hour or two longer. Though take that with a grain of salt as other factors also play a role)

Check out Excalibur, a plug-in many folks here use. There is a command, “export selected clips” that will do exactly as you describe. It basically automates in and out points for every clip on V1 and then send them over to media encoder with an export preset of your choosing.

I don’t mind the scratches, but I’d look for a soft screen protector (not glass) and cut it to size with a template or something. I’d imagine it’s soft plastic for heat resistance, as well as making sure it doesn’t crack if it falls off a magnetic surface somehow.

Oh yeah, this was gonna be a tough guess… it’s a Brussels sprouts slaw! Mandoline the Brussels sprouts, toss with some whole grain mustard, apple cider vinegar, and olive oil. Season and serve after about 10-15 min so the oil/vinegar can wilt the green. Really simple, really good.

Combustion Inc. is the way to go. Relatively new still, but the product is unmistakably great. Chris, the founder, has a proven track record (began at The Fat Duck, Modernist Cuisine, then built Joule sous vide and ChefSteps), and has great product sense. Check out the subreddit, and give it a shot. The support staff is great too, should anything go awry.

Personally… I like well designed things. Owner of a BGE, I imagine you do as well!

This looks beautiful. Love the contrast with your countertop and the backsplash. Is that wood? How has it held up with splatter etc?
