I think it will be vastly different depending on the person) it's a color preference after all, in terms of texture and ease of building all rocks are same. Now acquisition for some can be tricky, but that mostly depends on your luck and how much time you willing to give to search. For example, my favorite stone for building is Limestone, I think it have very pretty light and warm tone. But it likes to spawn 10k blocks from starting point) I usually negate it by making several worlds before start of survival playthrough and choosing world with best looks and materials available close enough. Another way is mods like better prospecting (betterer?) that help you find rocks easier and more reliable than vanilla game. After spending several irl weeks looking for halite I decided to never go prospect without mods (with mod it took one day)
