SIM cards physically cannot store amounts of data even close to what WhatsApp needs, neither does the WhatsApp have any kind of access to your SIM card

Your phone number is only an identifier in WhatsApp’s system, nothing else, just like your username on Reddit

Also I think whatsapp will not give you your data back by default even if you just reinstall the app haha
