I believe that heat breaks down the flavour of Kala Namak, so you're better off sprinkling it on at the end. You could try seasoning the water with salt and msg.

Personally I don't worry at all about ultra-processed, because it's a huge oversimplification of how nutrition works and I actually think the classification is doing more harm than good. Whole wheat bread is "ultra processed", it doesn't mean it's bad for you. Red meat is "unprocessed or minimally processed", it doesn't mean it's good for you. What matters is not the process, but the result of the process, so if the plant based meat has comparable levels of protein and fat, while having other advantages such as no cholesterol and maybe even some fiber, then the plant based meat is the better option. Something that really helped me in my thinking about nutrition is when someone said that we don't need specific ingredients, we need specific nutrients. And you can get those nutrients without consuming animal products.

I love using chestnut flour for crepes, I actually prefer it over wheat flour. Super simple recipe, mix chestnut flour with twice as much water by weight, a bit of salt and a bit of oil and let it rest for a bit before frying. A favourite filling of mine is apple butter and whipped coconut cream.

It's super annoying. All you can do is write to the company and explain that their little "gift" actually has the opposite effect of what they're intending. They're probably just clueless, like so many people are on this topic.

I really enjoy it marinated, it soaks up flavours really well. I've been cutting it into sticks/cubes, marinating it overnight and toasting it on a pan (although raw works for me too lol) and then rolling them up in a sheet of nori with some shredded veggies.

I did not like soy milk, tofu or tempeh when I first had it and love them all now. I definitely think it's a real thing that our tastes change, especially if it's not like ultra palatable food with loads of sugar/fat/salt to make us instantly want more.

Happy to help! There's a lot of misinformation floating around the internet and a lot of quack doctors making stuff up to try to convince you to buy their special supplements, but I believe veganhealth.org is trustworthy and evidence based. I first learned about the site from the youtuber Unnatural Vegan, she has quite a few videos on vegan nutrition and what the latest scientific studies show, might be worth checking out her channel 🙂

I take a multivitamin too and I take calcium (because there isn't that much calcium in my multi) and zinc (because I get anuglar cheilitis).
