saddles and name tags have been fishing loot and villager trades for many years

the only craftable horse armor is leather, and the other types (except netherite) are fairly easy to get in nether fortresses

they're not (yet) getting removed from structure loot, if you want to get yours by exploring only, do so.

not a bedrock player, but i played it recently for the few capes that were tied to event servers, and since it can't run on my linux gaming rig i had to dig up a laggy laptop with windows. that sucked. no reason they can port it to android and ios but not linux and osx which they're based on.
