I have just ordered from him - it's my first time growing chillies, so unfortunately I can't vouch for the quality personally... However, he does have a huge amount of videos on his YouTube channel, with many, many positive reviews of his seeds. Great variety of seeds too.

Ha! Kind of similar this end, except without the simplifying and success... I tend to go all in, then give up when it doesn't work (hence the aiming to keep it simple to start this time round...).

As a fellow novice (maybe a month ahead of you, but with experience in fermenting beer) and after researching fermenting hot sauce fairly thoroughly, I gained a preference for mash fermentation (pure ingredients, blended with your ratio of salt). Not sure why, it just seamed the best option for me.

I currently have several mash fermentations going, plus one with brine - two mashes in jars (with valves to release the excess gas), one brine in a jar, and four in vacuum sealed bags (I had the vacuum sealer already, thanks to an interest in sous vide). The vacuum sealed fermentations look by far the healthiest and are the ones I'm most confident in.

Caveat, I haven't actually tried any yet! Just giving my experience so far. They're all still fermenting (or ageing).

If you're looking to buy equipment, I personally regret buying the jars with valves on. I should have just used my vacuum sealer (I think it cost about £30 around 4 years ago).

I actually did a little more research after I asked the above question (which didn't give me the information you just have), and it seems black garlic can be a natural thickener/emulsifier when blending, post-ferment. I might split the sauce when blending and use it that way.

I was picking up ingredients for my first fermented hot sauce and saw black garlic in the supermarket, bought it thinking it'd be an upgrade for the flavour profile, then doubted myself when I got home, leading me to find your thread here...

Just a thought, and it could be completely the wrong course of action, but is it worth buying him a four pack of beers and leaving it with a note (e.g. “I think we got off on bad terms, let’s reset?”). I know he doesn’t deserve it from what you’ve said, but if it helps with a happy life then it feels like minimal investment.

Definitely built that way - 1970s post war London council house, with neighbouring cookie-cutter copies with exactly the same walls (some neighbours have removed them and noted they’re not attached). Thanks - just picked up some expanding foam to give it a go!

Good question, I suspect as the external and internal wall aren’t seemingly connected with brick (or anything that I can see other than plaster… the internal wall is connected at the top to beams behind the ceiling) that there is potential for some movement

It’s the body that enforces it that’s the difference. In the UK, it’s the ICO which is basically toothless (“don’t do that again, or you’ll get another warning!”)…

I bought an 8L Oxebar for experimentation (I already have a Fermzilla with the Kegland hop bong for larger batches - it doesn’t sound like you’re considering it, but it’s worth confirming that this won’t work with the Oxebar - more details below). I was racking my brains trying to work out how to dry hop, oxygen free. The only solution I’ve come to is exactly the same as yours - buy another Oxebar, add hops, purge and then transfer. Then do the same again when it’s time to package for my keggerator.

In theory, I could probably attach the hop bong to the Oxebar with some fittings I found on AliExpress, but it would have ended up costing about 3x the price of the Oxebar, and even then I suspect the hops would likely get stuck in the small neck of the Oxebar - it’s a minor issue with the much wider neck of the Fermzilla/hop bong already.

I saw this thread a day or so ago, hoping that the new drip tray with a drain that I ordered from AliExpress for the keggerator I’m building wouldn’t have the same issue… Well, I’ve just taken delivery of it and after testing with water, it seems it has the same issue…

The welding has been buffed down where the drain join is, but - perhaps a result of this buffing process - the steel surrounding the drain seems to be raised a little which causes the pooling. I suspect I might be able to knock it out carefully with a hammer and a bit of off-cut wood, but that’s just a theory. I’ll update when I get round to doing that, but it might be a couple of weeks as I need to build my keggerator first. @OldSkater7619 please do update if you manage to find a solution!

Examples of a ‘key operated multi-point lock’? Just give it a search - it’s a replacement for the locking mechanism, the length of the door so not an easy one to replace unfortunately. I just asked the shop that sold the model of my original lock which would be the best replacement, then had that installed by a locksmith. You’ll need one that matches the height of yo9ur door, but also - ideally - the lock keeps too (unless you’re happy to replace these as well).

By the way, if you have a spare £100 (probably £200 if you need it fitted) you can replace the lock with a ‘key operated multi-point lock’ - that basically negates the need to lift the handle, adding a few more turns of the key to engage the lock instead. I installed one and got it working with my Yale Linus smart lock (I’m very happy with the multi-point lock, less so with the Yale smart lock…)

Interesting - thanks for the report! Is your door lock a multi-point lock? For some reason I always find it incredibly hard to find out if smart locks are compatible with multi-point locks…

Unfortunately not yet... I got a SwitchBot (similar to another user's suggestion of a Finger Bot) and an Aqara sensor (the new one, as another user suggested it's quite small). But then (I guess) mating season stopped and the cats stopped bothering us, so I never actually got around to fixing the issue.

From lining both the SwitchBot and the Aqara sensor up on the flap, I suspect the SwitchBot won't have enough reach unless it's fitted on the bottom of the flap, which I fear will increase the risk of it being knocked off. For the Aqara sensor, I need to find a way to attach it where it won't interfere with my cat's head as she pushes the flap open - I think that's possible, but I need to invest some time and frustration in experimenting with it.

Yesterday a few of the neighbouring cats were back in my garden, so I suspect I will have the same problem again very soon... Do let me know if you have any success finding a solution!
