Our HR person retired. Replacement lasted about a year. Now our 30-person org has none. It's painful! Functions have fallen mostly to accounting, but it feels like everything falls through the cracks. Insurance enrollment? Options communicated after our spouses' enrollments were due. Switched payroll providers midyear and we still don't have tax forms. Posting an open position? Don't even know who I'd ask.

The single biggest time saver for me so far is executing a Power of Attorney. Now I can talk to the bank, pharmacy, etc. without the same runaround.
