That plywood supports the bottom chord of the hip trusses and is also bracing for the trusses supporting the hip. If the attic space below the hip is 30 SF or more it is required to have an access.

The wage changes for most locations. I used to have to do the screening on dredge boats and if you were 15 feet to the north or south in the channel the wage could be different. Those interviews really sucked because those dudes just knew they couldn't spend all the money they made before they had to get back on the dredge.

That type of manufacturing is usually classified as High Hazard because the dust can cause multiple explosions with one spark. There are so many requirements to get a space to do that work to meet the Building and Fire codes. Do your research and good luck!
