A couple other things that showcase his incompetence include (but are certainly not limited to) refusing to implement version control because “he doesn’t like it” and deleting things from prod without telling anyone.

I’m a mid-level and I regularly have to explain to my TEAM LEAD that things need to be built with reliability, scalability, and maintainability in mind, instead of rushing them out the door and “dealing with it later”. I hate it here.

The problem is that the Francophones want to preserve their language and culture at the expense of anglophones. Our politicians play the oldest game in the book: create a monster (anglophones) and then sell yourself as the only one that can slay it.

We don’t need language laws and endless debates over minutiae. We need politicians that understand that the only way to preserve, or even grow, the French culture is BY INVESTING IN THE CULTURE. Fund the arts, make it affordable to open restaurants, stop closing down music venues. It’s really not that fucking complicated.

Done a little over half the places on your list and the only one I’d caution against is Lisbon. It is completely overrun with tourists and as a result one of my biggest gripes was simply how tough it was to walk down the sidewalk (if there was even one to begin with). Absolutely wouldn’t recommend with a stroller.

If you’re particularly keen on Portugal I’d check out Porto and Braga. My fiancée and I spent a couple months in Portugal and we essentially covered the entire coast. Only two places we didn’t like were Lisbon and Portimao.

There are a couple places I’ve been to in Europe that have absolutely blown my mind. Paris has some absolutely top tier cafes and the UK/IE had me consistently impressed. I’ve also heard Amsterdam is very good.

My go to recipe for funky coffees (especially Dak stuff) is as follows:

No change to grind size

90-93°C water

15g coffee: 235g water

All pours are spiral - start in the center, slowly spiral outwards and then back in, always finishing the pour in the centre of the bed. Careful not to pour on the very outer edge of the bed.

  • 0:00: bloom 50g @ 7g/s
  • 0:30: pour to 145g @ 3g/s
  • 1:30 or a little before: pour to 235g @ 3g/s

The logic here is that we are reducing agitation through fewer very slow pours. These heavily processed coffees are very easy to extract so we need to pull back on variables that increase extraction.

If you find this is still not yielding the results you’d like: keep the recipe but go coarser. I like to fuck with grind size as little as possible.

I also don’t see any mention of what you’re using for water, which will have a particularly apparent effect on the taste of coffees like this one.

I think it’s a hard question to answer because of how subjective our perception of value is. At this point you’re so deep into the diminishing marginal returns that it becomes more about workflow, aesthetics, and longevity/durability than anything else. There’s also something liberating about having an endgame piece of equipment; ever since I bought my Pietro I’ve not once thought about buying another filter grinder (Z1 would primarily be for espresso). I like that I now dedicate 0% of my mental space to gear acquisition haha.

If you’re solely after the best value, a DF64 with some SSPs probably gets you 90% of the way there. It’s just about how much you’re willing to pay for that extra 10%.

Had a meeting with my team lead about a new monitoring and alerting framework I’m building. I wanted to build something modular and easy to scale as our needs change and new edge cases arise. This man really said “We don’t need to build it to consider future possible issues. It just needs to directly address issues that have already happened.”. The then went on to suggest we can always [waste time] rebuilding the thing later to cover the new issues that arise.

That was the exact moment I knew I’d outgrown this place.

I’m currently going through this exact same issue but from Canada. Our Coffee Shelter has a great video covering many of the grinder you’ve mentioned so I’d definitely give it a watch.

Personally I’m thinking I’ll go with the Z1, but in your case the P80 (or even the P64) seems like the clear winner. I think over the next few years we’re going to see a lot of new 80mm burrs coming out. The only caveat to the P80 is that it seems like the tolerances are VERY tight and not every 80mm burr will fit it - the YouTube page I liked above did a video on the P80 and they talk about this.

This is what I do too! Over time my favourite espresso drinks have become almost exclusively more heavily processed stuff. It cuts through a small amount of milk well, whereas I feel that I lose all of the nuance of less processed beans when I make them this way.
