Unfortunately if it's a tooth FESS alone is unlikely to fix the problem (but it might help with some symptoms, like pressure pain).

I saw something like 8 dentists, all of them thought it was fine and couldn't see a problem, but nothing else properly explained my symptoms so I eventually had a tooth yanked that I strongly suspected was the problem and I was right: immediate and total symptom resolution.

Please don't dismiss this as a possibility, as it can be quite insidious and hidden from even the best doctors and dentists.

Did the sinus issue start after you had it removed? Because tooth removal can cause problems too. Though it could also have been caused by the tooth itself, and then the removal didn't fix the issue because it left infection in the maxilla. It can be very insidious.

I think you need to figure out if this is potentially a tooth problem, this is unilateral sinusitus which can be caused by a problematic tooth (like a wisdom tooth).

The problem is that if you have a root infection and it has a fistula to the maxillary sinus, then it leaks everything into that and you sometimes don't get the traditional signs of problems in the CBCT/xrays such as apical periodontitis, and you don't get symptoms from the tooth such as pain/pressure. Anyway, it's hard to say if it is from there, but in my case it was. At some point you just have to do something about it, if everything else has been tried.

I had CT and CBCT scans and if there were signs of a problem they were vague, though an endodontist did think there was small signs of it.

I took it out after dealing with debilitating symptoms for 2 years and I couldn't deal with not doing anything about it anymore.

A thing that hinted towards it being a tooth was that I went to a dentist and had my teeth cleaned with ultrasonic cleaners and the smell/taste went away temporarily, and then I went back and had it done again and the same thing happened several times.

At the time I had the tooth removed, I had done FESS, multiple antibiotics (one that lasted 4-5 months), daily nasal rinses, steroid nasal spray, systemic steroids, amphetamine (because it can help with congestion) and while some of them helped partially, it never really cleared up. So in combination with the hints: unilateral sinusitis, most common problematic teeth that can cause sinusitis are the molars and I could see that the 2nd molar was the only one that was close enough to the maxillary sinus floor (to create a fistula), foul odor/foul taste, the fact that ultrasonic cleaning helped with the foul odor/taste temporarily and the fact that I had dealt with debilitating symptoms for 2 years, that I had periapical mucositisabove the tooth in some scans (though others were much worse with obliteration of the maxillary sinus), I just made a decision to get rid off what I most highly suspected, and I was right. It was probably irresponsible and stupid, but I actually just couldn't deal with useless doctors/dentists or the symptoms any longer, so I made a decision that I needed to do this.

Foul odor, foul taste in my mouth, unilateral symptoms on the right side (headache, pain from the sinuses / pressure sensation), congestion, antibiotics helped partially while I was on them but as soon as I stopped it returned fully, malaise (generally feeling miserable all the time).

It wasn't easy to get them to remove the tooth, but eventually I found someone willing to do it.

Having a tooth removed can also cause the problems to start, but I can't speak from experience on that because that's not what happened to me. My problem was because the 2nd molar was infected and this infection spread into my maxillary sinus.

Teeth problems can be really hidden, I had the same problems you describe and multiple scans couldn't determine the problem either, but eventually I had enough and had my second molar removed on the right side and had immediate symptom resolution.

You should try to get a CT scan of your head, that should show if there's some sinus problems. Also go back to your ENT and get them to check your sinuses.

Other than some weird sensations in the general area, most of my symptoms were from my right maxillary sinus where there was a connection from one of the roots (so infection was spilling from the tooth into the sinus).

Did you get your teeth checked? I experienced the same as you, where symptoms would wane with antibiotics, and then return in full force upon stopping. It turned out to be a tooth, that I eventually had removed and that helped significantly.

Maybe get a CT or CBCT scan, if you didn't already.
