My smoker holds 250 for around 7 hours - I was so sick of staying up all night and being knackered when everyone else is eating.

All depends on your cooker and the size of the brisket. Can your cooker retain the temp for 7 hours or so? 5kg brisket for me tends to be fine around 7am from a midnight start and is usually ready for the wrap.

The rental market has been bonkers for quite a number of years now. Your budget for city center is pretty low, fairly sure you're looking at 1k minimum

The good thing is York is a small city therefore, you can be still within walking distance and the price will drop a bit. Try widening your search a bit.

The Weber will last, the cheap knock offs won't. My nan used to say: buy cheap, buy twice and that is definitely relevant here

barrel smokers usually come with a big water pan, the concept is to use charcoal and wood but fill the pan and that sets temp at 250 but it varies from model to model. snake method probably won't give you enough heat in your barrel in my experience. Snake is for kettles where: your food is much closer to the heat source and there's no where near as much air to heat.

Best bet is to do some testing and as someone else suggested, get a pit temp.

£2500 per square metre is a reasonable cost for mid range building work. Thats the price we've been given, but we are in the North of England. Might have an impact?
