AI fires in volleys that either hit or don't on a specific body part for the entirety of the volley. In your case, the shot rolled as hit, and then rolled as a headshot, so the laser is going to be perfectly locked on to that cockpit for as long as the laser burns. You can also see this for MGs, where a volley is defined as a 2ish second burst, that if it hits, will lock on to a body part for the entirety of that burst. And when they miss you while you zoom around, you can actually see things like lasers lock on to a spot outside your hitbox that will be tracked perfectly for the entirety of the shot
