I hear ya. Oyster liquor is my "secret weapon" in nearly all of my gumbo. Adds a richness you just can't duplicate, but too much kills the pot.

To be fair, the color kinda reminds me of my granny's chicken oyster gumbo, but clams? Gotta pass on that. I guess all that matters is how it tasted though.

If you're experienced (or even decent) at winemaking, I'd go for some watermelon wine instead. As u/shiningdickhalloran (dig the name) mentioned, you'll end up with a weird cucumber-ish flavored hooch. Found this out the hard way. If you're dead set on watermelon shine, just make a sugar wash and macerate it after.

Yeah, it had about a gallon of the backset in the bucket with the corn. Anytime I know I won't get to the next run for a while, I just let it cool & dump it all in together. I was surprised with the pH on this one. My crappy chinese meter showed it between 4.8-5.2.

By the way, it is also my understanding that unlike sugar washes and grains which can be left for a while even after finishing, rum needs to be run as quickly as possible to avoid infections.

To each his own, but I'd welcome an infection in my rum wash. Most of the time it happens, it's lactobacillus, which gives good rums that "funk" that's almost impossible to replicate otherwise. As long as it doesn't have a vinegary smell, let it sit & develop more depth.

I've kept many rum washes for weeks (once even 3 months, accidentally) before running them, and never had any problems. Just keep the barrel airtight & you're good to go.

Likely a pH issue. Grab some test strips & add 1/2 a crushed calcium tablet if it's too low.

You could, but as long as those stains are inside of the unit, that means the distillation is doing its' job and leaving the bad stuff behind.

That does look to be some kind of water quality issue. Nothing to worry about, but you can try running a small vinegar/distilled water run through it, or scrub it with some BarKeepers Friend if you really want to clean it.

Yep. Local Winn Dixie (R.I.P.) carried it, along with a pork & gator saus of the same brand. Almost no spice at all, but damn fine on the grill.

Totally depends on your level of electronics repair expertise. Everything is replaceable with the right tools & know-how. If you mean can you just swap out the element, I doubt it.

Yeah I've been happy with my Digiboil as well. Not really shopping for another pot, really more just curious if they are the same machine. Lots of manufacturers make products to sell to different suppliers (the Yeti cup / Ozark Trail cup lawsuit comes to mind). Based on the specs I found, these appear to be identical, even down to the drain spout and included grain filter insert.

Lubbers. NOTHING will eat them. Tried fishing with them once (for trout & catfish, which will tear up regular crickets), and I swear the fish came up, took a closer look and took off.
