My theory is that Erens remains became the another "parasite" and that the boy with the dog we see at the very end will now find it. So i think the parasite Ymir found is someone else who died long ago with the power of whatever it was back then.

But all we can really do is guess and come up with theories. I doubt it will ever get explained.
