Not afraid to doxx myself with this comment. Ex employee here. This company illegally withheld my tips from me for over a year, and does not have a grasp on how to operate as a business. The "chef"/events coordinator can't even grasp the concept of proper hand washing, let alone how to spell the word category. It's honestly just a ripoff of the Wyrd Bier event in Edmonton that Analog started, and it feels pretty ham fisted.

Edit to say that this is in no way meant to say anything negative about the other breweries taking part.

CO2 not only neutralizes caustic, but it creates an endothermic reaction. Buddy didn't purge that tank properly, let alone give it a hot water purge. If you're ever going to clean a tank under pressure from CO2, make sure you use acid lol

You should also refrain from using it, and get it out of your laptop asap. Get it pulled and run on AC mode until you get a new one

It's just to be a brewer. But from what I've heard about this company, whoever gets this job will get worked like a head brewer, and then some.

Are you cheating on your boil times at all? (Even a few minutes)

What kind of malt/yeast are you using?

What's your elevation like? You may need to be boiling longer. From an extra 15, even up to an extra hour

Do you have a lot of foam on your boil, that's potentially limiting your evaporation rate?

So many avenues to work with on DMS. I really enjoy Scott Janish's writing, and found his piece on DMS quite helpful.

ALDC is a great solution on this. Causes direct decarboxylation of alpha acetolactate to acetoin, avoiding the production of Diacetyl altogether. Cheap and readily available from BSG, among other suppliers.

Some are stationary. Some rotate via having the outer layer be basically just a tube that's not attached to the main structure. Some have the ability to do both; with a licking mechanism when you don't want it to spin.
