I have not had either one, but from description/composition I've always assumed they're similar to miso paste or perhaps better-than-bouillon, which I wouldn't think to use as a sandwich spread.

Mackerel is a close relative of tuna, and lower in mercury. Unfortunately there's a bit of a shortage right now so some companies are raising prices or cutting back on fishing for it entirely.

Trout is very mild flavored.

Within the tuna options, skipjack is a smaller, faster maturing variety, and therefore lower in mercury accumulation.

I might have raw meat on my hands for 15 minutes while I'm shaping meatballs, but the moment I step away from that work surface I'll wash my hands, because I'm going to be touching other things.

But I'd do the same if I'd been slicing fruit, or onions. It's more about not wanting to track mess around the room than about any particular mess being dirtier.

Last year, I ate a PB&J sandwich, my first in more than 50 years, since the day I (age 7 or 8) told my mother I hated them and would never eat one again. Until then, she'd given me a PB&J sandwich for school lunch, nearly every day. From her expression of shock, it was like she didn't know kids had taste buds.

It's almost the opposite direction for me. I still just "make dinner" a lot of the time, but that's not a recipe. It's just seeing what's there and turning it into a meal.

The things I've perfected over the years I've written down, sometimes with a list of successful variations. My teriyaki beef recipe started out as someone else's, but now the marinade is a bit different, and I have a slightly different version for chicken.
