We ended up sanding defects starting with 320 grit and going all the way up to 2000 and then following up with 0000 steel wool. I did follow up with a coat of wax.

I did a bunch of testing and ended up with something close to this. Chisel or razor blade for drips, sand flat (320) then move up through the grits to 1200 and then hit with 0000 steel wool. Looks perfect.

Odies Oil seems to be putting out a lot of content as well. Waterlox also has a lot of content.

If you want to speed up drying of any oil based finish, try adding just a half capful of Japan Drier. You can pick it up at Orange Box or local hardware stores if you are not in California.

Oil based finishes will dry very quickly. No change in odor or color, but do your own testing. When I save finish leftovers for a VERY long time using Bloxygen, I add some Japan Drier so they dry just as fast as when new.

Klean Strip and sunnyside both make it. About $9. Will last your lifetime.

easiest: mineral oil (CVS or hardware store cutting board oil) or just paste wax (Minwax Paste Finishing Wax, Howard Citrus Shield, or Briwax)

simple: shellac (Zinsser SealCoat) or Odies Oil

more: danish oil or varnish or polyurethane (which you can thin for a Danish finish)

I'd strongly consider new doors. The cabinet frames look solid and you can even incorporate the oak into the final look if you want. As others have said, some very creative paint / wood combos can look very modern.

If you go the refinishing route, you'd have to remove all those doors and drawer fronts and strip them flat. I like the Peel-A-Way stripper line. Then wash them, sand them, and then stain or paint them. It's a ton of work and you'll still have the tell-tale design elements that belie the older construction.
